It depends on which MTA is running on your server.

Some MTA's use the first domain name listed in your /etc/hosts file
Some might use /etc/hostname, some might grab it only from their conf file.

You're going to want to do a reverse DNS lookup for your public IP,
find what it is, and set your server to that.
