Really, do what you're most familiar with.

Ubuntu seems to me to more widely known as a desktop OS than server OS,
partly because, as Kyle mentioned, it is more bleeding edge. CentOS is a
clone of Red Hat Enterprise Linux and is therefore more conservative. This
is probably more appropriate for a mail server- especially one that is
important.

If there are qmail RPMs, even better. If there are qmail debs, cool.
Otherwise, I guess you've got to do compile and install yourself. In which
case, it really doesn't matter, does it.

Use the Linux distro you're most familiar with.
