Most e-mail servers are provided by the distro anymore, and a simple
yum/apt-get command will install and configure them for local mail at
least.  There may be some setup involved for making them send/receive
for a whole domain or including anti-spam/anti-virus, but there are
enough HOWTOs (I've been re-reading some recently) on how to get that
done quickly enough, just like there are HOWTOs to get the most out of a
XAMP/LAMP install.
