I'm no expert on the subject, but I've done a little research. I've
wanted to set up a surveillance camera in the past. I installed FC4 on
an old junky laptop without X, and used a USB camera. Once I got the
camera driver working with V4L, I used this:

It's a software based motion sensor for the camera... it only stores
snapshots when pixels in the image are changing. It works pretty well,
and saves a ton of HD space. There's a ton of options, and it will do
MPEG video as well as spawn multiple threads for multiple video sources.
You could build a PC with multiple video capture devices and V4L should
sort them out and allow you to use Motion.
