Brian, you may want to check out Mac of all Trades  
(www.macofalltrades.com). Looks like they have iBooks as low as $299.  
Now you may not be able o run the latest-and-greatest software on the  
cheaper late-model macs, but for basic media and office applications  
they should work great.

I've ordered from them before as well and have been quite pleased  
with their service.
