Don't forget Mondorescue:

You can run it on a live system, and backup everything to another hard 
drive, an NFS mount, etc.  You can even backup your system to a bootable 
CD or DVD for a complete bare metal solution.  It copies by file, and 
has user-selectable compression levels to help you to cram your backups 
onto those CDs or DVDs.
